This is a quick and easy heat and eat breafast for a busy school or work day morning or adds a no muss egg dish to a wonderful brunch! This is a quick and easy heat and eat breafast for a busy school or work day morning or adds a no muss egg dish to a wonderful brunch!
Number of Servings: 12

Ingredients

    10 large eggs, beaten
    1/2 Small onion
    1 can (4 ounces) sliced mushrooms
    1 package (10 links) Lite Sausage (thawed and chopped fine)

Directions

Makes 12 individual servings (muffin tin)

Pre heat oven to 350
Spray a 12 cup muffin tin with nonstick spray

Beat eggs in a bowl, set aside
Finely chop onion and saute over medium heat;
3-5 minutes or until transulent
Add sausage and brown
Add mushrooms, chopped fine

Place in bowl and allow to cool for a few mins.

Beat eggs in a separate bowl.

Add cooled sausage mixture to eggs and mix

Pour into muffin tins, bake at 350 for 25 mins or until egg is set.

Eat warm, room temp, or store in air tight container in fridge and heat for 30 secs - minute in microwave for an on the go breakfast muffin!
