Ingredients

    8 oz penne pasta (I like barilla plus)
    4oz crumbled goat cheese
    1 cucumber chopped
    1/4 cup olive oil
    2 cups of arugula
    1/4 tsp (each) of salt and pepper
    2 tsp garlic


Directions

Boil the pasta according to the package dirrections and then drain it. Toss in remaining ingredients and serve or chill first if desired.
