    1 large onion, coarsely chopped
    6 cups water
    2 leeks, sliced (white part only)
    4 medium potatoes, peeled and coarsely chopped
    1/4 cup sauce
    2 cups tightly packed fresh spinach
    freshly ground pepper to taste


Place the onion in a large pot with 1/2 cup of the water. Cook, stirring, until the onion softens slightly. Add the remaining water, leeks, potatoes, and soy sauce. Bring to a boil. Reduce heat, cover and cook for 35 minutes. Add the spinach, stir well and cook for another 2 minutes. Puree the soup in batches in a blender. Return to the pot and season with pepper.
