Tips
This is an easy recipe to use substitutions and make due with whatever you have on hand!
Directions
Prep all of your food. Chop onion celery and apple. Rinse 2 cans of beans and drain in colander. Heat a couple tblsp of extra virgin olive oil in a large stock pot on medium/high heat. Cook the onion, and 11 oz bag of shredded carrots till softened stirring constantly. Add 1 tblsp chopped garlic and celery stirring until well mixed. Pour mixture in a bowl And set aside. Cook the 3 lbs ground turkey until no longer pink. Stir and scrape pan moving often as not to burn it, breaking up all the meat into smaller crumbles by chopping it down with spatula. Add 2 packets of chili seasoning and 1 cup of spring water to the cooked turkey and mix well. Re-add the onion & veggies, add the 1/2 cup of sauce and 1 1/2 cups of salsa to the pot and mix well. Lastly add the apples and the rinsed & drained beans. Bring chili back to a boil then cover and move heat to LOW. Simmer for 30-45 mins. Enjoy!
