Ingredients

    4.0 oz Cheddar Cheese
    0.25 cup Sour Cream
    1.0 tsp Fennel seed
    1.0 tsp Oregano, ground
    1.0 tsp Pepper, red or cayenne
    0.5 tsp Turmeric, ground
    0.33 tbsp Basil
    2.0 clove Garlic
    1.0 small Onions, raw
    2.0 squash (4 inch dia) Squash, winter, acorn, raw
    2.0 oz (20 halves) Pecans
    1.0 fl oz White Wine
    16.0 oz Turkey, Ground turkey, 93% lean
    1.0 cup Campbell's Cream of Chicken Soup (98% fat free)
    1.0 fl. oz Sherry, dry
    2.0 cup green giant cauliflower rice

Directions

Cut acorn squash on half. Place face down on baking sheet. Cook for 45 minutes. Brown turkey with onions and garlic in a skillet. Add cauliflower rice cook a few minutes. Add spices. Add wines. Add cream of chicken and sourcream. Place mixture in each squash half and top with pecans and cheese. Bake at 350 degrees for 20 minutes. Serving Size: 8 quarters
