    4.0 tbsp Butter
    0.33 cup Honey
    2.0 large Banana
    0.75 cup Aronia Berries
    1 Tbsp Chia seeds
    0.25 cup Buttermilk, lowfat
    1.0 tsp Vanilla Extract
    2.0 large Egg
    1.5 tsp Cinnamon, ground
    1.25 tsp Baking Soda
    0.25 tsp Salt
    1.5 cup Wheat flour


Preheat oven to 350F. Spray muffin tin with cooking spray. Melt 4.0 tbsp Butter in large bowl in the microwave. Add 0.33 cup Honey, mashed 2 large Banana, mashed/blended 0.75 cup Aronia Berries, 1 Tbsp Chia seeds, 0.25 cup low-fat Buttermilk, 1 tsp Vanilla Extract to the bowl. Whisk to combine. Whisk in 2 large Eggs. Sprinkle the 1.5 tsp Cinnamon, 1.25 tsp Baking Soda and 0.25 tsp Salt over the wet ingredients. Whisk until well combined. Add the 1.5 cup Wheat flour to the bowl and stir with large spoon until barely combined. Be careful not to over-mix. Scoop batter into prepared muffin tin with #20 (yellow handle) scoop - holds 0.20 cup Bake for 15-17 minutes until toothpick inserted into the center of a muffin comes out clean. Let muffins cool in the pan for 5 minutes and then remove to a wire rack. Serve warm or at room temperature.

  • Couldn't find Aronia berries, whatever they are, so substituted dried cranberries. Not bad. - 9/18/20
