Introduction

Ingredients

    1 tbsp Extra Virgin Olive Oil
    1 small Onions, raw
    3 clove Garlic
    1 stalk, large (11"-12" long) Celery, raw
    1 medium Carrots, raw
    800 gram ALDI diced tomatoes - 400g tin (by SCAPES)
    1 tbsp Oregano, ground
    2 tsp, crumbled Bay Leaf

Tips

Instead of adding the celery & carrot, I sometimes add a fat pinch of red pepper flakes. Simmer for 20 minutes, adjust your seasonings and freeze into containers.


Directions

Saute chopped onion, celery, carrot for approx. 5 minutes in extra virgin olive oil. Add garlic saute for another minute. Add two tins (32 oz/400g) unsalted crushed tomatoes. Season with salt & pepper. I use a salt substitute called Herbamare. Bring to a boil, simmer, covered for 30 min. or so. Grind in food processor. Makes approx. 6 generous cups. You can always add sausage or meat balls. I use 1 cup for hubby & I. The other 1-cup containers go in the freezer.

    I'm glad. I've been using this for a couple of years and think it's great. Regarding the size - it makes 6 one cup servings. One cup does for the two of us.
