Ingredients

    0.25 cup cassava flour (by JENNIFERR17)
    0.25 cup King Arthur 100% Unbleached White Whole Wheat Flour
    2 large Egg, fresh, whole, raw
    .25 cup Milk, 2%, with added nonfat milk solids, without added vit A
    4 tbsp Coconut Oil - Nutiva Organic Extra-Virgin Coconut Oil
    1 tsp Baking Soda

Directions

Beat eggs and warm coconut oil until smooth. Mix flour, baking soda and a pinch of salt. Then stir flour mix into eggs a couple of table spoons at a time.
Preheat the pan to medium heat, then pour out 4-5 inch of batter per pancake. Let it simmer until the batter solidifies and bubbles up, then turn with a spatula and cook the other side until golden brown.
Serve with syrup or your favorite savory toppings!
