Ingredients

    2 medium (approx 2-3/4" long, 2- Peppers, sweet, red, fresh
    3 tbsp Extra Virgin Olive Oil
    1 cup, chopped Onions, raw
    2 tsp Cumin seed
    1 tsp crushed red pepper flakes (by TORI7HARRISON)
    1 tsp Paprika
    4 clove Garlic
    2 cup Vegetable Broth
    2 cup, cubes Butternut Squash
    3.5 cup Canned Tomatoes
    4 serving Beans, Red Kidney (1/4 Cup Dry) (by TJMARTI)
    4 paddy%20 Beyond Burger

Directions

roast the butternut squash
cook dried, soaked beans in water 40 min
fry all ingredients in dutch oven- onions, then spices then all veg for 20 min
add beans
cook 25 min
optional: add Impossible Beef or Beyond Beef 1 lb

Serving Size: makes 8 servings 1 1/2c each
