A cool, refreshing summer salad to use up all those home grown tomatoes. A cool, refreshing summer salad to use up all those home grown tomatoes.
Number of Servings: 4


    6 Italian (Roma) tomatoes, chooped
    4 scallions, chopped
    1/4 cup fresh mint
    3 tsp. olive oil
    salt and pepper to taste


Combine all ingredients in a medium bowl. Gently toss to combine ingredients. Allow to sit for about 10 minutes for flavors to blend before serving.
