A low-cal spicy twist on lasagna for 2. A low-cal spicy twist on lasagna for 2.

    3 lasagna noodles, cooked
    4 slices fat-free American cheese
    4 ounces cooked and shredded white meat chicken
    1 tbsp chili powder
    1 tsp salt
    15-30 jalapeno slices, to taste
    1/2 cup meatless spaghetti sauce
    1 tsp hot pepper sauce
    1 tbsp chili powder
    1 tbsp minced or chopped onion
    1 tsp chicken seasoning (optional)


This is prepared in a small loaf pan.
Cut 2 of the cooked lasagna noodles to fit the bottom of the pan. Save remaining pieces for top layer. Toss shredded chicken with salt and 1 tbsp chili powder. In a separate dish, combine sauce ingredients. Make a bottom layer of sauce, and using 1/2 of the filling ingredients, layer as such: Noodle, sauce, chicken, jalapenos, cheese. Repeat one more layer, and top with extra noodle pieces, more cheese, and more jalapeno slices if desired.
Bake covered at 350 for 20 minutes, uncover, and cook for 10 additional minutes. Makes 2 300-calorie servings.
