    extra virgin olive oil
    white onion
    romaine lettuce
    lime juice


serves 4
To make the salad: Preheat the oven to 375. Finely ground the pistachios and add 1/2 tsp salt and 1/2 tsp pepper. Press the chicken into the nuts. Place the the chicken in a baking dish and bake until done.
Heat remaining oil in a nonstick skillet over high heat. Add the diced onion, 1/4 tsp salt and a pinch of pepper. Cook until the onion is browned.
Line 4 serving plates with lettuce. Slice the chicken and arrange1 breast on top of the lettuce, serve with dressing.
You can add whatever other toppings to the salad. I also add some low fat parmesan cheese, and used cesar dressing instead of the avocado and it was great.

For the dressing: Puree the onion, avocado, oil, lime juice, and water in a blender.
