    1 lb pork stew meat, cubed
    2 cloves garlic, minced
    1 medium onion, chopped
    2 Tbsp canola oil
    1 15oz can sweet corn, drained
    1 15oz can pinto beans, drained and rinsed
    5 medium red potatoes, cubed
    1 12oz container of frozen green chile
    1 tsp of cumin
    1 tsp pepper
    1 tsp salt
    4 cups water (enough to cover)


In large sauce pan, heat oil over medium heat. When oil is hot, add garlic, stew meat, salt, and pepper. Brown stew meat. When the meat is browned, add remaining ingredients, stir, cover, and reduce heat to low. Cook on low heat for 60 minutes, stirring occasionally.

Makes 8 1.5 cup servings. Serve with flour tortilla.
