Ingredients

    24 ounces Chicken Breast (cooked), no skin, roasted
    1 cup, chopped Carrots, raw
    1 cup, diced Celery, raw
    1 cup, chopped Onions, raw
    2 serving Wyler's Reduced Sodium Chicken Cubes (Buillion) (by PIMI57)
    .33 tbsp Xanthan Gum - Bob's Red Mill (by CEELEE53)
    8 tbsp Great value half & half
    6 serving "Great Value" Cheese, Fiesta Blend (1/3 cup)
    6 tbsp Butter - Great Value salted sweet cream butter
    2 large Egg, fresh, whole, raw
    8 serving Bob's Red Mill Almond Flour - per 1/4 Cup
    Salt
    Pepper
    Poultry seasoning

Directions

Cook and dice chicken. Add 2 tbsp butter to pan and saute carrots, celery and onion until tender. Add broth and xanthan gum and whisk until thickened then add half and half, 1 cup cheese, and seasonings to taste. Turn off heat and stir in chicken. put into casserole dish.

Prepare crust. Combine eggs, almond flour, 4 tbsp butter and 1 cup cheese. Use pastry cutter to combine. Spread mixture out between 2 sheets of parchment paper until it is the size of your dish. Carefully put crust on top and bake for 30 min at 350.
