    1 Tbsp (7.5 grams) Better Body Foods Organic Coconut Flour
    1 Jumbo Egg (1 egg- 63g)
    2 Tbsp (24 grams) Trader Joe's Organic Chia Seeds
    15 grams Pecans
    1/2 tsp Baking Powder
    1/4 cup (8 fl oz) Water, tap


When soaking the chia seeds, make sure to stir them in with the water so they absorb water evenly.


1. Soak Chia seeds in 1/4 cup boiling water for 2-3 minutes.
2. Mix in egg, then remaining ingredients until evenly distributed. Can add non-sugar sweetener as well - I like monk fruit or erythritol.
3. Cook in a fry pan on medium heat for 4 minutes on each side.
4. Serve with or without toppings, as desired.
