    4 Lg Eggs
    5 c 1% milk
    1.5c Colby Jack Shredded Cheese
    4Tbsp Chili Verde Salsa
    Any leftover extra lean ground beef or meatloaf.


Whisk eggs, milk and chili verde together. Add cheese and blend. Pour into large skillet and begin to cook. When eggs look as though they are almost dry add meat and cook for addl 20 minutes (as meat may add more moisture).

This is a great way to use left overs!
