Ingredients

    0.5 cup Quaker Oats Old-Fashioned Rolled Oats
    1 cup Milk, 3.25%
    1 cup Flour - Gold medal all purpose flour
    2 tsp Baking Powder
    0.75 tsp Salt
    2 medium (7" to 7-7/8" long) Banana, fresh
    2 large Egg, fresh, whole, raw
    4 tbsp Butter, salted
    0.5 cup, chopped Walnuts

Tips

No sugar was added, as ripe bananas are very sweet. You can add more sugar if you like.


Directions

Cook 1/2 cup oats in 1 cup milk until soft. Mix 1 cup flour, 2 tsp baking soda, 3/4 tsp salt in bowl. Mash bananas. Melt butter. Combine flour mix, bananas, butter, oats, and eggs until blended. Add chopped walnuts and mix. Pour batter into greased muffin tin. Bake at 400 F for 25 min.

Serving Size: Makes 10 medium-sized muffins
