Cheesy Enchiladas Cheesy Enchiladas

Ingredients

    20.0 tortilla Las Tortilla's Corn Tortillas 5 inch
    6.0 cup, chopped or diced Roasting Chicken, light meat
    1.0 large Onions, raw
    1.0 serving Red Bell Pepper (one medium pepper)
    1.0 pepper, large (3-3/4" long, 3" dia) Yellow Peppers (bell peppers)
    8.0 tbsp Salsa, Tostitos Chunky Salsa, mild
    3.0 cup, shredded Cheddar Cheese
    4.0 cup, shredded Mozzarella Cheese, whole milk

Directions

Shred chicken with onions, peppers and salsa on low til soft. Add water or chicken stock if needed Microwave tortillas for 30 to 45 seconds Sprinkle cheese in bottom of baking dish Fill tortilla with 3 to 4 top filling and roll. Place in baking dish Place remaining of cheese on to and cover with tin foil
