Number of Servings: 4

Ingredients

    4 large Egg, fresh, whole, raw
    .25 medium (approx 2-3/4" long, 2- Peppers, sweet, red, fresh
    .25 pepper, large (3-3/4" long, 3" Yellow Peppers (bell peppers)
    .5 cup, pieces or slices Mushrooms, fresh
    2 serving Green Onion (fresh-1 stalk)
    0.5 cup Colby and Monterey Jack Cheese shredded
    1 tbsp Butter, salted

Directions

Dice veggies, saute' in butter in oven proof pan. Mix eggs and pour over top veggies. Bake in 350 oven for 10 minutes. Sprinkle cheese over top, broil for 2 minutes to melt cheese.
