Introduction
I created this soup one day because a friend of mine had given me a bunch of canned vegetables that I knew my husband wouldn't touch otherwise.Feel free to add any other vegetables you have on hand, as well as give this a kick with your favorite seasonings or by adding a spicy pepper or two! Ingredients

1 LB ground turkey
1 medium onion, chopped
2 C diced potatoes, or 1 can sliced potatoes
1 C celery, chopped
1 C carrots, chopped, or 1 can sliced
1 C lentils, rinsed and sorted
.5 C pearled barley
1 can (14 oz) beef bouillion or 2 cubes
1 tsp salt
3 cloves garlic, chopped
1 can spinach, drained
4 C stewed tomatoes (no salt)
8 C water
1 Tbsp ground pepper
Seasonings of your choice
Directions
Brown ground turkey with onion until meat is cooked through. Put in bottom of VERY large crock pot or soup pot.
Layer all vegetables and bouillion cubes (if using) over meat mixture, then lentils and barley. Add all remaining ingredients to pot except for tomatoes.
Cook 6 hours in crock pot on LOW, or simmer on stovetop, until tender. Add tomatoes, heat through, and serve.
This is even better the next day!
