Ingredients

    2 serving California Blend Frozen Vegetables (Broccoli, Cauliflower & Carrots) 2/3 cup
    1 leek Leeks
    1 cup Bok Choy, raw-shreaded
    1.25 cup Co-op Gold no salt added diced tomatoes (by SIDEKICK01)
    4 cup Vegetable Broth
    4 stalk, large (11"-12" long) Celery, raw
    1 cup, pieces or slices Mushrooms, fresh
    0.5 cup Baby Corn Canned (1/2 Cup) (by JAZZDIVA1)
    4 tbsp chopped Shallots
    1 tbsp Rosemary
    3 tsp Thyme, fresh
    1 tsp Salt
    1 tsp Pepper, black
    3 clove Garlic
    1 cup (8 fl oz) Water, tap
    1 tsp, crumbled Bay Leaf
    1 tbsp Butter, salted

Directions

Saute' vegetables and garlic in butter. Stir in tomatoes, broth and water. Add Spices, salt and pepper to taste. Bring to a boil then let simmer for 30 minutes. Enjoy!
