Introduction

Number of Servings: 4

Ingredients

    1.25 cup Lentils
    3 clove Garlic
    1medium or 1/2 large onion, diced
    3medium or 2 large carrots, diced
    2 stalks celery, diced
    1 tbsp Extra Virgin Olive Oil
    14 oz can of tomatoes (whole or diced - half of a large 28oz can)
    6cups chicken broth
    1 tsp each of Cumin, Oregano, salt and pepper
    3 small or two medium dried Bay Leaves - leave them whole
    0.5cup of frozen spinach

Directions

Add EVOO to a dutch oven on medium heat and add onion, carrots, and celery. Cook until onions are translucent. Add garlic, spices, and lentils, and cook for a couple more minutes. Add tomatoes (if whole, break them apart), broth and spinach. Simmer for 40minutes or until lentils are cooked. Serve with fresh parmesan cheese.
