Ingredients

1 tsp. Extra Virgin Olive Oil
1/2 onion, diced
4 mushrooms, sliced
4 cloves garlic, sliced
(2) 6oz boneless, skinless chicken breasts
2 oz fresh mozzarella
2 Tbsp. low sodium chicken broth
1 fl. oz sherry or marsala
Directions
Preheat oven to 425°F.
Heat oil in a skillet.
Add onions and mushrooms and saute for 4 minutes.
Add the garlic and cook for one more minute.
Move the onion mixture to one side of the pan.
Season the chicken breasts with salt and pepper before searing on all sides, for 3-4 minutes.
Top each breast with a slice of mozzarella.
Add broth and sherry to the pan.
Cover the pan with a lid and move it to the oven.
Bake for 10-15 minutes, or until done.
