Introduction

This uses fairlife milk and an 8oz bag of cheddar cheese. This uses fairlife milk and an 8oz bag of cheddar cheese.

Ingredients

    2 can (12 oz) yields Yellow Sweet Corn, Canned
    1 box Jiffy Corn Muffin Mix
    8 oz shredded Cheddar Cheese
    2 large Egg, fresh, whole, raw
    4 oz Fairlife Fat Free Milk
    0.5 medium (2-1/2" dia) Onions, raw

Directions

Mostly drain one can of corn and then blend until slightly chunky. Can use creamed corn but will alter nutritional info. Add other drained can of corn to blended corn. Add half the 8oz shredded cheddar cheese Add eggs and milk Add corn muffin mix Mix and pour into sprayed 8x8 baking dish Top with remaining cheese Bake at 350 for 30-40 minutes until cheese on top is golden brown.
