Introduction

Number of Servings: 4

Ingredients

    Lentils (one bag)
    Carrots (about a cup)
    Celery (2 stalks)
    Garlic (2 cloves)
    Kale (2 cups chopped)
    Chicken Broth (or veggie broth- 6 cups)

Directions

Chop all of the vegetables into bite sized pieces (no need to be fancy). Bring the 6 cups of chicken/veggie broth to a boil while you're chopping. Add the lentils and stir. Bring to a boil again. Add all the veggies except for the kale. At this time add your favorite seasonings. I add curry powder (about 2 Tbs.), another Tbs. of crushed red pepper flakes, a few grinds of sea salt and pepper, and thyme. Turn down and simmer (covered) for about 25 minutes. Fill a glass w/ 2 cups water. After 25 min. add more water for desired consistancy and add kale. continue simmering for another 10-15 min. Serve with a bit of whole grain crusty bread (and even a little goat cheese if you can).
