Number of Servings: 4


    4 cups broccoli florets
    1 lb firm tofu
    3 tsp toasted sesame oil, divided
    1 bunch scallions (6-8),thinly sliced
    3 cloves garlic, minced
    1 small jalapeno, seeded and finely chopped
    3 1/2 tsp low-sodium soya sauce
    1/2 cup toasted sliced almonds
    2 cups cooked brown rice


1. Lightly steam the broccoli for 5 minutes. Set
2. Heat 2tsp of oil in a wok or non-stick skillet over high heat. Add tofu and cook, stirring consantly for 5 minutes or until browned. Transfer to shallow bowl.
3.Add remaining oil and heat 30 secs. Add the scallions, garlic, chile pepper, and broccoli. Stir-fry over med heat for 2 min. Stir in the soya sauce, almonds and tofu, tossing gently. Serve over brown rice.
