    1.5 sweetpotato, 5" long Sweet potato
    1 bunch Broccoli, fresh
    2 tbsp Extra Virgin Olive Oil


Preheat oven to 425F.
Line cookie sheet with parchment paper or foil.
Peel and dice sweet potatoes.
Cut broccoli into bite-sized pieces.
Toss both in olive oil, seasoning to taste with salt, pepper, paprika,
cayenne pepper, oregano, and thyme.
Roast for 30 minutes, tossing once halfway through the cooking time.

Serving Size: Makes 2 servings.
