Ingredients

    12 oz Mahi Mahi
    2 lemons sliced (save ends)
    1 medium zucchini
    1 medium yellow squash
    1 C julienned carrots
    approx. 40 fresh green beans
    3 scallions, chopped
    salt and pepper to taste (may substitue lemon pepper seasoning)

Directions

Preheat oven to 450 degrees.

Tear 4 large squares of aluminum foil.

Slice lemon into 1/4 inch slices. Lay two or three slices on each square of foil just off center (larger half will be folded over to make top of packet).

Divide Mahi Mahi into four servings and place directly on lemons. Sprinkle fish with salt and pepper or lemon pepper seasoning.

Slice zucchini and yellow squash and divide amoung 4 packets. Place on top of fish. Pile julienned carrots and green beans and scallions on top.

Sprinkle with additional salt and pepper or lemon pepper seasoning if desired.

Close packets by folding one side several times until it is snug to contents. Then fold front close several times and finish with other side. Place packets on cookie sheets and bake for 22 minutes.

Be carefull of steam when opening packets. Plate and serve. Lemon juice can be squeezed from ends of lemons over fish just before serving.

    this was really good! though I'll admit I used talapia instead of Mahi mahi. I want to try it with different veggies. - 7/5/12
