Ingredients

    3 large ripe tomatoes, chopped
    1 sweet onion, chopped
    1/4 cup of fresh cilantro. chopped fine
    Juice from 2 large limes
    1 fresh jalapeno pepper, chopped fine
    Salt, pepper and ground cumin to taste

Directions

Mix all ingredients together and let marinate at least 1 hour (overnight is better) to allow flavors to mingle.

For a smokier flavor, try adding a chipolte or smoked chile.

Chopped green olives and a good optional ingredient, but be sure to add them seperately to your daily food log to count their fat and salt contents.
