Ingredients

    1 large Onions, raw
    1.5 cup Bell peppers (Green, Red, Yellow, Orange)
    1.0 cup Bell peppers (Green, Red, Yellow, Orange)
    2 cup Beef stock, home-prepared
    1 cup Rice, white, long-grain, regular, raw, enriched
    16 oz Ground beef, extra lean (15% fat) pan broiled
    .75 cup kernels Yellow Sweet Corn, Frozen
    4 serving McCormick Chicken Taco Seasoning, 1 pack equals 4 servings (by DEIDRE82)
    1.5 cup Salsa

Directions

cook rice in beef broth should be 20 minutes
brown meat with onions and peppers and drain
add taco seasoning to meat with 1/2 cup water and corn, cook until water is reduced
Add cooked rice to the meat mixture and then add salsa and serve.
Can top with cheese and sour cream but not included in nutritional information.
