Introduction

Veggie side dish - I used Goya adobo, garlic and fresh dill for seasoning.

you can make zoodles of the zucchini, or slice into thin ribbons.

Number of Servings: 4

Ingredients

    4 cup, sliced Zucchini
    1 jar Trader Joe's Marinated Artichoke hearts - drained.
    2 cup, pieces or slices Mushrooms, fresh
    2 tbsp Extra Virgin Olive Oil

Directions

Splash 1/2 olive oil in large saute pan.
Add mushrooms - season as desired.
When mushrooms are just starting to soften, add the drained artichoke hearts.
Turn the heat down to simmer, cover until the artichoke is heated through.
Add the sliced or spiralized zucchini.
Toss together until zucchini begins to soften. Don't cook too long or it gets mushy.

Serving Size: Makes 4 servings about 6 oz each
