My new favorite cookie. A rich satisfying, slightly crunch on the outside, soft in the inside cookie. My new favorite cookie. A rich satisfying, slightly crunch on the outside, soft in the inside cookie.

    3 cup King Arthur Flour Unbleached All-Purpose Flour
    1/2 Cup Organic Old Fashioned Rolled Oats, dry
    .75 tsp Baking Powder
    .75 tsp Baking Soda
    1.5 tsp Ground Cinnamon
    .75 tsp Sea Salt
    2 stick Butter, unsalted
    1 Cup Swerve Granular
    1 Cup Truvia brown sugar blend
    2 large Egg, fresh, whole, raw
    2 tsp Vanilla Extract
    .25 cup Molasses, blackstrap
    1 tsp Pureed Ginger
    1 Cup Toll House Dark Chocolate Chips or Trader Joe's dark chocolate chunks
    .75 cup, chopped Pecans
    1 Cup Turbino raw sugar


Preheat oven to 350 degrees.
Measure dry ingredients into a bowl and mix together. Set aside.
Cream butter with mixer. Add sugars, eggs, vanilla, molasses and ginger to butter, mixing well.
Gently fold in chocolate and pecans
Chill the dough for 30 minutes.
Put turbino sugar in a small bowl, about 1/2 at a time. Scoop the dough into 1.5 tblsp. sized balls and roll lightly in the turbino sugar. Put rolled dough about 1" apart on a baking sheet (non-stick or covered with parchment). [6 rows of 4 cookies fit on a large baking sheet]. Press rolled cookies two directions with fork tines.
Bake cookies for 13-14 minutes at 350. Prepare a second sheet of dough/cookies while the first if baking. It takes 3 individual sheets of cookies to make all.
Cool cookies on a rack.
