Number of Servings: 16

Ingredients

    2 cup, mashed Zucchini
    1 cup, packed Brown Sugar
    1 cup Granulated Sugar
    1 tbsp Vanilla Extract
    3 large Egg, fresh, whole, raw
    1 cup Canola Oil
    1 tsp Salt
    1 tsp Baking Soda
    0.25 tsp Baking Powder
    3 cup Flour, white
    3 tsp Cinnamon, ground

Tips

Can be made gluten free using gluten free substitutes


Directions

Beat sugars, eggs, oil
In a separate bowl, grate zucchini & add vanilla
In a separate bowl, combine dry ingredients
Alternate adding zucchini mix & dry mix to sugar mix
Once combined, pour into two 8" x 4" loaf pans
Bake at 325 degrees F for 1 hour. Let cool for 10 minutes


Serving Size: Makes two loafs, 8 servings per loaf
