    1 can Pink Salmon, drained
    1 c. crushed Saltine Crackers, divided
    1 lg. egg
    1/2 c. vegetable oil
    salt and pepper to taste


Drain salmon. Mix together can of salmon, 3/4 c. cracker crumbs, egg and salt and pepper. Shape into 8 patties. Roll in remaining cracker crumbs. Heat oil in pan. Place the patties in the oil and cook until golden brown on each side.
