Ingredients

    10.5 serving Beef Chuck Boneless Cross Rib Roast (3 oz)
    3 medium Carrots, raw
    2 serving Red Bell Pepper (one medium pepper)
    1 medium (2-1/2" dia) Onions, raw
    1 cup Pineapple crushed in unsweetened pineapple juice (by STEVELINDER)
    0.5 cup Soy sauce (shoyu), low sodium
    6 tsp packed Brown Sugar
    2 tbsp White Vinigar (by CRAZYKEWL)
    1 tsp Aldi Minced Garlic (by LTPACE610)
    0.5 tsp Pepper, black
    3 tbsp Argo 100% Pure Corn Starch
    45 mL Water, tap
    24 serving Lettuce (Bibb - 1 leaf)
    3 serving Green Onion (fresh-1 stalk)

Directions

1) combine roast, peeled and diced carrots, diced peppers, and diced onion in crock pot.
2) stir undrained pineapple, soy sauce, brown sugar, vinegar, garlic, and pepper and pour over the roast
3) Cook covered on low until roast is tender (6-8 hours)
4) remove roast from slow cooker. cool slightly and shred
5) skim fat from cooking juices, transfer juices and vegetables to a small saucepan. Bring to a boil over high heat.
6) combine cornstarch and water in a small bowl. gradually stie into juices and cook until sauce is thickened (3-4 mins)
7) return beef to slow cooker. cook until heated through (10-15 mins)
