Introduction

This is the easiest chicken salad to make and so good! I used a rotisserie chicken and only the breast meat which was about 6oz. This is the easiest chicken salad to make and so good! I used a rotisserie chicken and only the breast meat which was about 6oz.

Ingredients

    6.0 ounces Chicken Breast (cooked), no skin, roasted
    3.0 tbsp Mayonnaise, Hellman's Light
    2.0 serving Egg Hard Boiled (1 serving = 1 large egg boiled)
    0.25 cup, chopped Onions, raw
    1.0 tsp or 1 packet Yellow Mustard

Directions

Shred/chop the chicken breast (you could use a food processor if you like a smoother consistency) Chop the 2 boiled eggs Chop half a yellow onion (1/4 cup) Add all ingredients in a bowl and mix well Serve right away or chill in the refrigerator I eat mine with rice cakes or crackers
