    1 cup black beans, 0.5 cup corn, 0.5 cup red onion, 0.5 tomato, 1tsp cumin, salt, pepper, and cilantro, 1 lime juice yields


Mix together corn and beans, dice onion and tomato to a fine chop, add cumin, salt and pepper to taste, juice 1 lime, and cilantro, and enjoy!

  • I used a can of black beans, corn & diced tomatoes plus 1 cup frozen diced green pepper and frozen chopped onion. Rinsed beans, corn. onion & pepper. Added chili powder, cumin, & garlic-pepper seasoning to taste. Let stand to mingle flavors - 6/22/10
