    1 stick of Blue Bonnet Light Margarine
    1 C, unpacked brown sugar
    1/2 C egg beaters
    2C mashed bananas
    1T vanilla extract
    1C whole wheat flour
    1C all purpose flour
    1tsp baking soda
    1tsp baking powder
    pinch of cinnamon
    1/2 C walnuts, chopped (*optional)

    *Nuts are optional, but have been included in the calorie calculations.


Makes 20 muffins (1/4 C of batter each)

In a large mixing bowl or a tabletop mixer cream together the margarine and brown sugar. When combined incorporate the eggs, bananas, and vanilla extract. In a seperate bowl sift together the whole wheat flour, all purpose flour, cinnamon, baking soda and baking powder. Then add the dry mixture slowing into the wet mixture. DO NOT OVERMIX. When finished fold in the walnuts.

Grease your muffin tins and place 1/4 C of muffin mixture in each cup. Bake for 20 mins or until a toothpick is inserted in the middle of a muffin and comes out clean.

NOTE: I used a 1/2 C muffin tin. Depending what size of muffins tins you use will depend on the serving size and calories.
