Introduction

Low fat, low calorie and low carb. I take these to work with me for breakfast. You can store them in the fridge or they can be frozen and reheated in the microwave. Low fat, low calorie and low carb. Ingredients

    4 large eggs
    1/4 cup nonfat milk
    2 slices of low fat ham or turkey diced
    1 small onion diced
    1 10oz package frozen spinach, thawed and drained

Directions

Coat 6 cup muffin tin with cooking spray. Preheat oven to 350.

Mix eggs and milk together well. Be sure to squeeze out all the water from the spinach. Add all other ingredients and mix well.

Pour equally into muffin tins and bake for 20 - 25 minutes or until egg is completely set.
