    2 russet potatoes, peeled and boiled
    1 cup raw purslane, finely chopped (large stems removed)
    2 tbs Hellmann's or Best Foods light mayonnaise


Boil potatoes, cool, add purslane, mayo, salt and pepper, vinegar or lemon juice if desired.
