Ingredients

    1.5 cup Bob's Red Mill Almond Meal/Flour (1/4 cup is 28g)
    1.5 cup, unthawed Blueberries, frozen (unsweetened)
    6 tsp Natural Sweetner, Natvia Brand, 3g (1 tsp) - AUS (by 85KGTO57KG)
    2 tbsp Butter, salted
    1.25 cup Yoghurt - Plain Unsweetened DeWinkel
    .5 tsp Baking Soda
    1 tsp Baking Powder
    3 medium Egg, fresh, whole, raw
    1 tsp Vanilla Extract

Directions

Preheat oven to 180C. Mix eggs, yogurt and butter until creamy, add dry ingredients & vanilla and mix until incorporated, Line muffin trays and fill until 2/3s full. Add blueberries to top of mixture, if added to mixture while mixing blue berries sink to the bottom and interfere with baking time. Bake for 15 minutes or until done.

Serving Size: Made 9 medium sized muffins
