Ingredients

    0.50 tsp Paprika
    0.50 tsp Pepper, black
    0.50 tsp Salt
    4 clove Garlic
    2 medium (4-1/8" long) Scallions, raw
    1 cup, chopped Green Peppers (bell peppers)
    1 medium (2-1/4" to 3-1/4" dia.) Potato, raw
    1 tbsp Extra Virgin Olive Oil
    0.25 tsp Cumin - ground (1 tsp)
    1 cup Red Onion Raw (1/4 cup, 40g or 1.4oz)
    1 tsp Lime Juice - ReaLime 100% Lime Juice
    4 grams Cilantro, raw
    2 serving Black beans, 1/4 cup dry
    4 Tbsp La Mexicana Medium Salsa
    2 large Poached Egg

Tips

You can add avocado slices, cheese, or jalapenos to make this yummy skillet breakfast even better!


Directions

Cook potato in water until nearly soft.
Cook beans in water until tender but not squishy.
Heat oil in cast iron skillet.
Add potatoes, onion, garlic, green pepper, salt, pepper, paprika, and cumin.
Cook until potatoes get somewhat crisped.
Stir in cilantro, lime juice, and beans.
As that cooks, poach the eggs.
Slice scallions at an angle.
Plate bean mixture.
Top with egg, scallions, and salsa.






Serving Size: Makes 2 hearty servings
