Ingredients

2 large Egg, fresh, whole, raw
2.50 tbsp Butter, unsalted
2 tsp Pumpkin Pie spice
1 tsp Vanilla Extract
1 oz (20 halves) Pecans
1 tsp Baking Powder
0.50 cup, packed Brown Sugar
1.50 cup Dairy, Milk - Whole - 1 cup
1.25 serving Pumpkin-Libby's 100% Pure Pumpkin (1/2 cup)
4 tbsp chia seeds
2.75 cup Oats, Quaker (1 cup dry oats)
Tips
Recipe is really flexible. Switch up pumpkin for banana, add raisins or chocolate chips. Use coconut oil instead of butter or add some PB. This version is the best tasting I've made, and the slightly higher sugar level means my kiddo enjoys them as well.
Directions
Mix wet ingredients and dry ingredients separately. Combine and distribute to greased muffin tin. Bake at 350 20-25 min.
