Ingredients

    1.5 cup Lentils - Great Value
    1 tbsp Extra Virgin Olive Oil
    1 medium (2-1/2" dia) Onions, raw
    3 clove Garlic
    2 stalk, large (11"-12" long) Celery, raw
    0.5 tsp Paprika
    0.5 tsp Cumin seed
    0.5 tsp Dried Thyme (by ARCTIC.ORCA)
    1.75 cup (14 oz) Hunt's Diced Tomatoes
    1 cup, chopped Carrots, raw
    1 medium (2-1/4" to 3-1/4" dia.) Potato, raw & chopped
    6 cup Swanson Vegetable Broth (by MAYABUTTA)
    1 tsp, crumbled Bay Leaf
    0.25 tsp Cayenne Pepper (Ground)

Directions

1) Heat oil, add onion & cook for 3 min; then add garlic & cook another minute.
2) Add celery, Italian seasoning, paprika, cumin, thyme and cayenne & cook for 30seconds
3) Add lentils, tomatoes, carrots, potatoes, bay leaf & vegetable broth
4) Bring to boil, reduce heat & let simmer for 40 minutes or until stew has reached desired texture
