Ingredients

2 cup Egg substitute, liquid (Egg Beaters)
.5 small Onions, raw
42 grams Light Life Smart Sausage Vegetarian Chorizo (1 link, 85g)
.33 tbsp Xanthum Gum - Bob's Red Mills (1TB,9g) .083 =.25ts (by CORLISSTRIEDIT)
2 oz Almond Breeze Almond Milk, Unsweetened Original, shelf stable
10 serving Crepini Thin Cauliflower Egg Wraps
1 cup Good Planet Mozzarella Cheese Shreds (plant-based)
Tips
Serve with ketchup or hot sauce.
Directions
Mix xanthum gum and Almond milk together.
Add mixture to 2 cups of egg beaters and mix with hand mixer.
Stir in chopped 1/2 onion, 1/2 grated Light Life sausage.
Pour mixture into Muffin-Top pan filling almost to top.
Heat oven to 400 and bake for 20 minutes until center springs back.
Remove from oven and prepare to wrap the egg circles.
Place an egg circle on a crepini and begin to roll it up.
After 1 turn, sprinkle Good Planet Cheese shreds inside and complete the roll.
Wrap in saran wrap and store in a ziplock bag.
Freeze and microwave for 1 minute before serving.
