Ingredients

    4 c shredded, cooked chicken
    2 can (10.75 oz) Cream of Chicken Soup
    1 c Sour cream, light
    1 can (10 oz) RO TEL No Salt Added Diced Tomatoes & Green Chilies
    1 can (15 oz) Beans, black
    1 envelope McCormick Gluten-free taco seasoning mix
    5 c coarsely crushed Tortilla Chips
    2 cup cheese - shredded taco cheese
    chopped fresh Cilantro, raw, chopped tomato, green onion or fresh salsa for garnish

Directions

Preheat oven to 350. Spray casserole dish with cooking spray. Combine shredded chicken, soup, sour cream, diced tomatoes, beans and taco seasoning in a bowl.

In the casserole dish, layer the chicken mixture, with tortilla chips and cheese. Cover with aluminum foil.

Bake for 30 minutes. Remove aluminum foil and continue to bake for another 10 minutes until the cheese begins to bubble. Remove from oven.

Sprinkle with garnishes prior to serving
