Easy salad to toss together for lunch or dinner.
Easy salad to toss together for lunch or dinner.

    .75 cup Quinoa, cooked
    .5 cup Chickpeas (garbanzo beans) , rinsed and drained
    .5 cup, pared, chopped Cucumber (peeled)
    .5 cup, chopped Red Ripe Tomatoes or halved grape tomatoes
    .5 lemon yields Lemon Juice
    1 tsp Olive Oil
    1 tbsp Parsley


Blend lemon juice, oil and parsley. Add salt and pepper to taste if desired. Mix the rest of the ingredients together, add dressing and blend well.
