Ingredients

    24 oz Swai Fillet (baked) (4 oz svg)
    1 package (10 oz) Spinach, fresh
    1.5 serving Athenos Crumble with Basil & Tomato Feta Cheese ( 1/4 Cup) (by GRACEFULSISTA)
    2 serving Garlic, cooked (1 clove / serving)
    1 tbsp Olive Oil
    3 serving Chopped Onion (2 tbsp/1 serving)
    2 tbsp Parmesan Cheese, shredded
    .125 tsp Nutmeg, ground
    1 tbsp Paprika
    1 tbsp Oregano, ground
    1 tsp Salt
    0.5 tsp Black Pepper (Ground) (by TIARENEE)

Tips

Cooking time is dependent on fillet thickness.


Directions

Heat oil in saucepan.
Add garlic and onion and saute for a minute or two.
Add spinach to pan.
Saute for about 3 minutes.
Take off heat. Add feta and Parmesan. Season with nutmeg, salt and pepper.
Set aside to cool.
Season fish with salt and pepper.
Place about 2 tablespoons of filling onto the center of each piece of fish.
Roll fish around stuffing.
Place fish seam side down into baking dish.
Drizzle with olive oil (if desired).
Sprinkle fish with oregano and paprika.
Bake at 400 degrees uncovered for 30 minutes or until fish flakes easily with a fork.

Serving Size: makes 3 7-8 ounce fillets
