Ingredients

    2 tbsp Extra Virgin Olive Oil
    1 medium Onion, chopped
    3 clove Garlic, minced
    3 medium carrots, halved lengthwise and cut crosswise into 3/4 inch slices
    1 pound Lentils
    32 fl oz Water
    1 tsp Salt
    1 tsp thyme
    13 oz Hillshire Farm Turkey Smoked Sausage, cut diagonally into 3/4 inch slices
    .5 cup fresh Parsley, chopped

Directions

1. chop onion, mince garlic, halve and cut carrots into 3/4 inch pieces, chop parsley, cut sausage diagonally into 3/4 inch slices.

2. saute onion, garlic, and carrots in oil over moderately high heat for about 5 minutes.

3. add lentils, water, salt, and thyme. bring to boil, reduce heat, simmer partially covered until lentils are almost tender, about 20 minutes.

4. add smoked sausage and parsley. cook about 10 more minutes, or until lentils are tender but not falling apart.
