    1.5-2 lbs Flank Steak- Pounded flat
    1T Fresh Parsley- chopped
    1T Fresh Oregano- chopped
    1t Fresh Rosemary- chopped
    1t Fresh Thyme- chopped
    1/3c Grated parmesan cheese
    1 1/4 c Flavored Croutons
    2 Medium Eggs
    1T Canola oil
    3c Tomato Sauce
    salt (to taste)


Pre-heat oven to 350.
In a food processor combine all ingredients except for steak, oil and salt. Mix till a paste forms. Lay flattened steak on plastic wrap and spread paste over steak. Using the plastic wrap to help roll steak tightly like a jelly roll. Tie with Butcher's string so that it will not come unrolled. Let stand 15 mins. Rub outside of roll with canola oil and sprinkle lightly with salt. Sear in large skillet.

In a baking pan heat the tomato sauce in the oven while searing the steak.. When steak is browned add to baking pan and cover with sauce. Cover with foil and bake for 35-45 mins.

Let rest again 5 mins before slicing into 8-10 slices.

  • I often make this recipe but don't use the eggs or the rosemary. If you don't have croutons, you can use bread crumbs or day old Italian bread. Rather than bake, I usually simmer in the sauce for 45 - 60 minutes. Delish and it freezes well too so you can make several rolls at the same time. - 7/30/10
